- 1/2 red onion, finely chopped

- 1 cup fresh parsley leaves, finely chopped

- 1/4 cup fresh mint leaves, finely chopped

- 1/4 cup extra-virgin olive oil

- 3 tablespoons fresh lemon juice (about 1 large lemon)

- 2 cloves garlic, minced

- Salt and pepper to taste

Instructions:

1. Prepare the Cauliflower Rice:

- Place the cauliflower florets in a food processor and pulse until they resemble the texture of rice or couscous.

- Heat 2 tablespoons of olive oil in a large skillet over medium heat.

- Add the cauliflower rice, season with salt and pepper, and sauté for 5-7 minutes, or until it becomes tender. Stir occasionally. Remove from heat and let it cool.

2. Assemble the Tabouli Salad:

- In a large mixing bowl, combine the diced cherry tomatoes, cucumber, chopped red onion, fresh parsley, and fresh mint.

- In a separate small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, minced garlic, salt, and pepper to create the dressing.

- Pour the dressing over the vegetable mixture and toss everything together until well combined.

3. Combine Cauliflower Rice and Salad:

- Once the cauliflower rice has cooled, add it to the tabouli salad mixture.

- Gently fold the cauliflower rice into the salad, ensuring that the flavors are evenly distributed.

4. Chill and Serve:

- Refrigerate the Gluten-Free Cauliflower Tabouli for at least 30 minutes before serving to allow the flavors to meld.
